Lemon Icebox Pie

Here's a recipe perfect for summer with nice, cool lemony flavors for those hot summer days! 

1 Graham Cracker crust
1 can fat-free Eagle Brand condensed milk 
3 egg yolks, lightly beaten
1/2 cup fresh squeezed lemon juice (approx. 3-4 lemons).
Zest of two lemons.

Mix the egg yolks, condensed milk, lemon zest, and lemon juice in a bowl.  Whisk lightly.
2.  Pour mixture into Graham Cracker crust.
3.  Bake at 350 degrees for 15-20 minutes.  Let cool, refrigerate, and enjoy!

 You can use the egg whites that you separated earlier to make a meringue.  
 You can also substitute limes for lemons for a key lime pie.
